Apple Pie Bread Pudding

Tastes like apple pie but easier to make, this apple pie bread pudding is a scrumptious treat!

Ingredients

7 slices of vegan bread
1/2 cup coconut milk
3/4 cup unsweetened apple sauce
1 teaspoon vanilla extract
2 teaspoons cinnamon
2 tablespoons maple syrup
1/4 teaspoon salt
3 granny smith apples, peeled and chopped
1 cup brown sugar
3 tablespoons corn starch

  1. Preheat the oven to 350 degrees Fahrenheit.  Grease an 8 x 8 inch pan with some extra coconut oil.
  2. Cut all of the bread slices into cubes and set them aside.
  3. In a large mixing bowl, whisk together the coconut milk, apple sauce, vanilla extract, cinnamon, maple syrup, and salt until all of the ingredients are thoroughly combined.  
  4. Toss the bread cubes into the liquid mixture and stir until all of the liquid has been absorbed by the bread and the bread is completely coated.
  5. Pour the bread pudding into the pan and set it aside.
  6. In another mixing bowl, mix together the apples, brown sugar and corn starch, mixing until the apples are all fully coated.  Pour the apple mixture on top of the bread pudding.
  7. Smooth out the apples and then bake for 40 to 45 minutes, until the apples are soft and have slightly caramelized.  
  8. Serve while still warm and top with a sweet vanilla glaze, some vegan coconut-based whipped cream, or a scoop of vegan vanilla ice cream.
