The best breakfast item in the entire world, these vegan crepes are also perfect for dessert!

Recipe

Ingredients

1 and 1/2 cup coconut milk
1 cup all purpose flour
1/2 tbsp. cane sugar
1/4 tsp. salt
3 tbsp. coconut oil

Directions​

  1. In a medium medium sized mixing bowl, whisk together 1 cup of the coconut milk, flour, sugar, and salt until there are no clumps left.
  2. Add in the rest of the milk along with the coconut oil, whisking until you have a smooth better.
  3. Lightly grease a frying pan and pour 1/4 of the batter onto it.  Tilt the pan to evenly spread the batter.
  4. Cook over medium heat for about 1 to 2 minutes, or until the no wet better remains on the top. Lift the edges of the crepe with a spatula, grab the edge with your hands and flip te crepe over.
  5. Cook for about another minute.
  6. Transfer to a plate and repeat until there's no batter left.
  7. Enjoy!
