Curtido

Pupusas are a delicious, classic Salvadorian dish, but no pupusa is complete without curtido!

Here's the recipe for Vegan Empire's pupusas!

Ingredients

1 medium head green cabbage, thinly sliced
1 medium yellow onion, thinly sliced 
3 to 4 medium carrots, washed and peeled
1 tbsp dried oregano
1 and 1/2 tbsp salt
​1/2 to 1 cup vinegar
1 jalapeno, seeded and sliced (optional)

  1. With a vegetable peeler, slice carrots into thin strips.
  2. In a large bowl, mix together all of the ingredients except for jalapenos and vinegar and use your hands to squeeze the juices out of the vegetables and mix all of the ingredients together.
  3. Stir in the jalapenos and vinegar
  4. Make sure that the vegetables are completely submerged in liquid.  If not, add brine (1 tsp salt per 1 cup water) until the vegetables are fully covered.
  5. Transfer to an airtight dish and set in the fridge at least overnight.  The longer it sets, the more flavor the curtido will have.
  6. Serve and enjoy!
