Eggless Salad

Perfect for a picnic or a busy day, this delicious eggless salad is easy to make and ready in less than 5 minutes!

This eggless salad is delicious in a sandwich, but I absolutely love it in a wrap!

Recipe

Ingredients

15 ounce can garbanzo beans
1/4 cup vegan mayonnaise
1 tablespoon nutritional yeast
1 teaspoon yellow mustard
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon salt
black pepper, to taste 

Directions

  1. Drain* and rinse the canned garbanzo beans.
  2. In a medium sized mixing  bowl, use a fork to mash the garbanzos until there are only a few chunks left.
  3. Mix in the vegan mayonnaise, nutritional yeast, yellow mustard, onion powder, garlic powder, salt and black pepper until thoroughly combined.
  4. Serve as is or in a sandwich.  I prefer making a wrap with mine!  Enjoy!

*You can use the liquid (also known as Aquafaba) to make Mini Cardenales.
