Marshmallow Fondant

Easy to make, fun to decorate with, and tasty to eat, this marshmallow fondant is perfect for making any cake!

Ingredients

1  10oz bag Dandies mini marshmallows*
3 tbsp. water
4 to 6 cups powdered sugar
1/2 tsp vanilla extract
​A few drops vegan food coloring  (optional)
*You can use regular-sized marshmallows instead, but the mini ones are easier to melt.  

Directions

  1. In a large pot, mix together the water and marshmallows until they are all covered.  Turn on the heat to low and mix continuously until there are no lumps left.  Turn off the heat and mix in the vanilla extract.  Allow to cool slightly.
  2. In a large mixing bowl, add the powdered sugar.
  3. Add the marshmallow mixture and knead together.  If the fondant is too sticky, add some more sugar, and if it's too dry and crumby, add a bit more water.   
  4. ​Knead in a few drops of food of food coloring (if using) and shape however you want.  Enjoy!
