S'mores Cookies

A soft, moist cookie with a sweet and fluffy marshmallow filling, these s'mores cookies are tasty treats perfect for cold rainy days!

Recipe

Ingredients

1  1/2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil or vegan butter-flavored coconut oil (at room temperature)
1/3 cup apple sauce
1 cup cane sugar
1 tsp vanilla extract
3 – 6 tbsp. coconut milk
2/3 cup Enjoy Life chocolate chips
9 large Dandies Marshmallows, cut in half*
*The best way to slice marshmallows is with a pair of kitchen scissors, not a knife.

Directions

  1. Preheat the oven to 375°F and line a baking sheet with a piece of parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking soda, and salt. 
  3. In a medium bowl, beat together the coconut oil, apple sauce, vanilla extract, and sugar until thoroughly combined.
  4. Pour the wet mixture into the dry mixture and mix until just combined.
  5. Mix in the chocolate chips and 3 to 6 tbsp. coconut milk, starting with 3 tbsp. and adding until the dough looks like traditional cookie dough.
  6. Scoop around 2 tbsp. of the dough and divide it in half.  Sandwich half of a marshmallow between the halves and seal the edges so that the marshmallows is no longer visible.  
  7. Repeat with the rest of the dough.
  8. Place evenly spaced on the baking sheet and bake for 7 to 9 minutes.
  9. Allow to cool for about 5 minutes, serve, and enjoy!
