Vegan Easter

This was my very first Easter as a vegan, and I can assure you, it was just as fun as our past ones!  My sister and I knew that it was highly unlikely that the Easter bunny would come to our house because of Covid-19, so we decided that we should have a tea party to celebrate.

The night before Easter, Mami set the table nicely and went to make the treats for the party that she was hosting.  Since it's been hard to find flour lately, we decided to purchase brownie mix.  On a regular day we wouldn't; we'd start from scratch.  Well, we had to add mashed bananas, and the only ones that we had at the time were frozen ones.  Mami set them out to thaw and used them in the recipe.  Furthermore, the mix was gluten-free, and we're only used to using all-purpose flour.  Well, that went wrong...

She also made some coconut macaroons that require only two ingredients.  Never before had we followed that recipe, this would be the first time.  We also had to use mashed bananas to make it.  Again, they were the frozen ones.  The batter was all runny and not firm as it ought to be.  Mami tried removing the excess liquid by squeezing the batter before rolling it into medium-sized balls.  She placed them on the cookie sheet and baked them along with the brownies.  After that was all done, we all went to bed.

When we woke up the following morning, on Easter morning, Mami and I went on a scavenger hunt which my sister, Ariana had set up.  When we were done we played a game of Risk.  Ariana won at that after conquering the entire world.  After that we had breakfast (peanut butter oatmeal with vegan chocolate chips.  Delicious!) did a few other things, and then Mami surprised us.  She had purchased us a little gift and had hidden it somewhere around the house.  We spent a while trying to locate it, and finally, I did.  It was hidden with some books on a shelf.  Sneaky Mami! It was a vegan chocolate bunny! It was so good!  Just as good as the ones that contain dairy, if not better! ​

Ariana and I were hungry by now and asked if we could have the tea party.  That was at 1pm.  Mami said that yes, we could.  She tried to cut the brownies and guess what?  They were raw!  Completely raw.  She tried to bake them for a while longer but it didn't make much of a difference.  Only the edged baked and ended up sticking to the pan.  Mami scooped up the raw dough and rolled it into balls as I had suggested.  If we couldn't make brownies then we could at least make chocolate macaroons.  That didn't work either.  The dough flattened and became more like cookies, but they were stuck to the cookie sheet and looked like they would be hard and sticky.  Not really good when you have braces like I do. 

The tea party commenced at around 3pm, and we didn't have any brownies.  We're not sure what caused them to end up the way that they did.  Was it because they were gluten-free?  Was it because the bananas had been frozen?  Did adding too much coconut oil cause that to happen?  Who knows?  It could have been any of those.

​We really had fun at the tea party.  The vegan cheese and ranch sandwiches that Mami made were absolutely delicious; we all thought so.  The macaroons were a bit dry and not very sweet, but they were still good.  The brownies weren't served for lunch since they were so hard and sticky, but everything else was great.  I also liked the delish-fish that we'd gotten.  They were really good.

When we were all stuffed after a large and tasty lunch, we decided to do a puzzle.  It was a puzzle that Mami had received on Christmas but had never done.  It was a 101 Dalmatians puzzle that contains 700 pieces.  We haven't completed it yet, but we will soon.

At the end of the day we all sat down and watched a movie while we ate some of my famous vegan mac and cheese.  We all thought that the movie, "Girls Just Want to Have Fun" was really funny and that my mac and cheese was delicious.  Everyone licked their bowl clean leaving not a single drop.

​We then went to bed and fell asleep after reading for a few minutes.  This really was a great Easter, even without the Easter bunny. No animal products needed!

I love this post, really funny with the brownies. Also I like that no animal suffered.
