10 ounce bag frozen broccoli florets
2 large carrots, rinsed, peeled and chopped
3 cloves garlic, minced
2 and 1/2 pounds potatoes (about 8 to 10 medium-sized potatoes), rinsed and diced
1 medium onion (yellow or white)
1 and 1/2 teaspoon oregano, dried
1 teaspoon thyme, dried
8 cups vegetable broth
1/4 teaspoon nutmeg
1/2 cup nutritional yeast
1/2 cup and 2 tablespoons olive oil
salt and pepper, to taste (if your vegetable broth is really salty, you won't need to add more salt)
