Cake Pops

Bite-sized treats on a stick, decorated in a variety of ways with countless flavor combinations, cake pops are easy-to-make, fun treats, that are super tasty!

Ingredients

For the cake pop:
your favorite non-frosted vegan cake
vegan frosting*

For the white chocolate coating:
1/4 cup cacao butter
1/4 cup powdered sugar
1/2 tsp vanilla extract
2 pinches salt
A few drops vegan food coloring (optional)

Directions

  1. Bake the cake according to its recipe's instructions and allow it to cool completely before using in this recipe!
  2. Using your hands or a food processor, turn the cake to crumbs.  Add in the frosting bit by bit until you have a non-sticky, dough-like consistency. 
  3. Shape the batter into balls and place on a tray or plate to set in the fridge for at least 20 minutes, but more is okay!  You may want to reshape it afterwards and place back in the fridge so that the shape sticks. 
  4. Meanwhile make the chocolate by melted the cacao butter over medium heat in a stove-safe glass dish**. 
  5. Once melted, remove from heat and add the remaining chocolate ingredients.  Stir until thoroughly combined. 
  6. Dip the cake pop stick into the white chocolate and insert into the cake pop, then place back in the fridge for another 20 minutes.  This is important so that the cake pop stays on the stick.  
  7. Once set, dip the cake pop into the white chocolate, coating it entirely, and place back on the flat dish in the fridge to set.  You can repeat this step as many times as you'd like for a stronger coating, but that's not necessary!
  8. Serve and enjoy!    

Notes

*Make sure that the frosting flavor pairs well with the cake!  Any vegan frosting with a buttercream-like consistency should work, and it can be homemade or store-bought!  No measurement is included since it varies depending on how much cake you're using and how dry or moist it is. I used about 1/4 cup for half a batch of chocolate cake.
**I simply used a glass measuring cup for this.  I recommend placing the dish in a pot with a few inches of water to create a sort of double boiler.
