Chinese Lo Mein

A rainbow of veggies with a delicious savory sauce, mixed with noodles, this Chinese Lo Mein is a great dish, and because it's full of vegetables, it's also rich in key nutrients and vitamins!

Recipe

Ingredients

16 ounces angel hair or spaghetti noodles
2 tablespoons olive oil
4 cloves garlic, minced

1 onion, thinly sliced
10 ounces bag frozen broccoli florets, thawed
10 ounces bag frozen cauliflower florets, thawed
4 carrots, julienned
1 cup snap peas
1 bell pepper, julienned
6 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon ground ginger

Directions

  1. Cook the noodles according to the directions on the box, drain and set aside.
  2. While the noodles are cooking, heat the olive oil in large skillet over medium-high heat.  Sauté the garlic and onion together for 2 minutes.  Then, add the broccoli, cauliflower, bell pepper, and carrots; continue to cook for 6 minutes.  Turn off the heat and set the vegetables aside.
  3. In a small mixing bowl whisk together the soy sauce, sugar, sesame oil and ground ginger.  Once thoroughly combined, pour the sauce over the vegetables.  Once all of the vegetables are evenly coated, add in the noodles.  Toss to combine and it's ready to serve!
