Chocolate Chip Coconut Macaroons

Sweet, soft and a caramelized bottom, these chocolate chip coconut macaroons are the perfect tea time treats!

Ingredients

14 oz. unsweetened shredded coconut
2 tsp vanilla extract
14 oz. coconut condensed milk
1-2 cups vegan chocolate chips*

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.  Line two cookie sheets with  parchment paper and set aside.
  2. In a large bowl, mix together the shredded coconut, vanilla extract, and condensed milk.  When everything is well combined, stir in the chocolate chips.
  3. Roll the batter into tablespoon sized balls and place them evenly spaced on the cookie sheets.
  4. Place in the preheated oven and bake for 15 to 20 minutes or until the tops are golden brown.  Once the macaroons are done baking, allow them to cool.  After about ten minutes they should be ready to serve.   
*It all depends on how much you love chocolate!
