Creamy Spinach Pasta - 1 Pot

A savory, creamy pasta with spinach, ready in a few minutes and made with just one pot, what's not to love?

Sorry about the poor lighting.
I made this recipe not too long ago, and it was really good!  The only thing that I didn't like was that there wasn't enough spinach, but that's an easy fix :)

Recipe

Ingredients 

1 tbsp. vegan butter-flavored coconut oil (I use Thrive brand)
3 cloves garlic, minced 
16oz your favorite pasta, uncooked

3 cups vegetable broth
7oz container Violife cream cheese
1/4 tsp black pepper
1/2
 tsp onion powder
1 tsp lemon juice 
2 cups fresh spinach (feel free to add more)

salt, to taste
​Violife parmesan, grated (optional)

Directions

  1. Melt the coconut oil in a large pot over medium heat.  Once melted, add the garlic and sauté for a minute. 
  2. Add the vegetable broth and pasta and stir.  Bring to a boil, then reduce the heat to medium-low. Cover the pot and let simmer for 6 to 8 minutes or until the pasta is to your liking.  Add more vegetable broth if needed. 
  3. Once the broth has been absorbed and the pasta is to your liking, mix in the cream cheese, onion powder, black pepper, and salt.  
  4. Once the cream cheese has melted, add in the spinach and continue to cook until the spinach is wilted.  
  5. Add the lemon juice. 
  6. Serve while still room and top with some shredded Violife parmesan (optional)!  Enjoy!
