I like to say that these cookies taste like the holidays! They have a ton of delicious chocolate flavor, toasted marshmallows, and just a hint of mint! They're like Christmas cookies, hot coco, peppermint, and toasted marshmallows all wrapped into one amazing, sweet treat!
Not to brag, but these cookies are super good and a hit in my family! The first day that I made them, everyone loved them. So, naturally, I made them again the next day, and they were just as loved then! They are definitely going to be one of my go-to cookies for the holiday season from now on!
I personally love using the Dandies mint-flavored mini marshmallows, as they add the perfect amount of mint to the cookie! The way that they toast on top is also amazing! However, the traditional vanilla variety would also be a good option!
1/2 cup vegan butter, softened*
1/2 cup cane sugar
1/2 cup brown sugar
1/4 cup oat milk**
1 tsp vanilla extract
1 1/2 cup all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
3/4 cup vegan chocolate chips***
1 5oz bag Dandies mini mint marshmallows****
*Vegan butter adds a little extra flavor that I personally like, but coconut oil works well too!
**Oat milk is my personal favorite, but any plant-based milk should work.
***The Enjoy Life brand is a great choice, but feel free to use your favorite!
****You might not want to use them all; it depends on how many marshmallows you personally prefer. Also, these mint ones are sometimes hard to find, so Dandies' vanilla marshmallows would be a good option if you can't find them or simply don't want to use them. If you do use the vanilla ones, replacing the vanilla extract with mint extract would help to still add the hint of mint! I just don't think that mint marshmallows and mint extract would be good together.
