What's better than a chocolate chip muffin? A double chocolate muffin of course! At least, that's true for a chocoholic such as myself!
These are super tasty and super easy to make! So they're the perfect treat to make when you're craving something sweet!
1 1/2 cup all-purpose flour
1/2 cup cocoa powder
3/4 cup cane sugar
1 tbsp. baking powder
1/2 tsp salt
1 cup vegan chocolate chips
1 cup oat milk*
1/2 cup mashed banana*
1/2 tsp vanilla extract*
1/3 cup melted vegan butter*
*Oat milk is my personal choice, but any plant-based milk should work, so feel free to use your favorite!
*A browned banana is sweeter and works best in this recipe, but still make sure that there are no chunks left. And if you don't want to use banana, 1/2 cup of applesauce will work just as well!
*Using mint extract instead is another great option!
*Options that I like include Miyoko's, Violife, and Full Circle Farm's vegan butter. Melted coconut oil or olive oil also work if that's what you'd prefer!
