Focaccia

A warm and flavorful bread that's soft in the inside and crispy on the outside, this homemade focaccia is a tasty side dish!

Ingredients

  • 3¾ cups + 4 ½ tsp all-purpose flour*
  • 1 tbsp. active yeast
  • 2 tsp salt + extra for sprinkling  
  • 1 tbsp. olive oil** plus extra for drizzling
  • 1¾ cup plus 2 tbsp. cold water
  • 2 tbsp. dried rosemary
*Use a spoon to scoop the flour into the measuring cup and do not compact the flour
**Please make sure that your olive oil comes from handpicked olives!

Directions

  • In a large mixing bowl mix together the flour, yeast and salt.  Stir in the olive oil.
  • Thoroughly mix in the water (there will be lumps which is okay).
  • Cover and set in a dry place at room temperature for 7 to 9 hours.
  • 20 minutes before the dough has finished rising, preheat the oven to 400°F and line an 8" x 8" metal cake pan with parchment paper.
  • Once the oven is ready, scrape the dough out of the bowl and into the pan. 
  • Spread the dough evenly in the pan, then dip your fingers with oil and use your fingers to make indentations of the surface of the dough.
  • Drizzle with olive oil and sprinkle with rosemary and salt.
  • Bake in the preheated oven 37 to 40 minutes, or until slightly golden brown in spots.
  • Remove from the oven, allow to cool, and enjoy!
