Hummus Pasta

A garlicy and flavorful pasta, this hummus pasta is a tasty dish that everyone is sure to love!

Recipe

Ingredients

2 tbsp. olive oil
1 medium onion, sliced
2 garlic cloves, sliced (or minced)
1 cup spinach
1 cup hummus
1 pound of your favorite pasta
1 to 2 tbsp. lemon juice
Pinch of crushed red pepper (I like adding a bit more)
1 cup water
​1/4 tsp. salt

Directions

  1. Cook the pasta in salt water according to package instructions, drain, and place the noodles back in the pot to keep them warm.
  2. Heat the olive oil over medium heat in a large skillet, along with the salt and red pepper.  Add the onions and cook for 5 to 7 minutes or until fragrant and softened.
  3. Add the garlic, and cook for an additional 30 seconds and then add the spinach and cook for about 1 minute, or until is wilts slightly.
  4. Mix in the hummus, water, and lemon juice, and stir until creamy. 
  5. Serve and top with Violife parmesan cheese!
