Meatless Meatballs

Crispy on the outside, tender in the middle, these meatless meatballs are full of flavor and easy to make!

I like making meatball subs with these meatless meatballs.  Simply serve on a warm bun with some vegan marinara sauce and a slice of Violife provolone!

Recipe

Ingredients

2 cups cooked chickpeas, drained 
2  1/2 tbsp. ground flax seed
6 tbsp. water
1/2 cup vegan breadcrumbs
1  1/2 tsp. garlic powder

2 tsp onion powder
1 tsp dried parsley
1 tsp marjoram
1/2 tsp salt
1/2 tsp basil
1/4 tsp black pepper

Directions

  1. Preheat the oven to 450°F.
  2. In a blender or food processor, blend chickpeas until crumby.
  3. In a small bowl, mix together the flax seed and water.  Let it sit for 10 to 15 minutes.
  4. In a large mixing bowl, mix together the chickpeas and the flax seed mixture.
  5. Mix in the remaining ingredients (If too sticky, add in some more breadcrumbs, 1 tbsp. at a time, and if it is too dry, add some vegetable oil. You want the dough to be rollable with your hands.).
  6. Roll the dough into the shape of meatballs and place onto a greased baking sheet (you can use parchment paper instead).
  7. Bake for 20 to 25, flipping halfway through.
  8. Serve with your favorite sauce and enjoy!
