An airy merengue, topped with a turret of whipped cream and freshly sliced strawberries, this is a delicacy that everyone will enjoy!

Ingredients

​1/2 cup aquafaba*
3/4 cup cane sugar
1/2 tsp cream of tartar
1 container fresh strawberries, sliced
vegan whipped cream (store-bought or homemade)

​*Aquafaba is the water that's in a can of chickpeas.  It can be used in many recipes including this one!

Directions

  1. Preheat the oven to 220 degrees Fahrenheit and line two baking sheets with parchment paper.
  2. In a large bowl, beat together the cream of tartar and aquafaba using an electric mixer.  Continue doing so until the mixture starts to get foamy.
  3. Slowly add in the sugar while still beating.  Continue beating until the meringue starts to form peaks.  This should take several minutes.
  4. Scoop up spoonful's of batter and place them on the baking sheet.  Bake in the preheated oven for 2 hours.  Do NOT open the oven while this cooks or the meringue may deflate because of the temperature change.
  5. Remove from the oven and allow to cool for several minutes.  Before serving top merengues with whipped cream strawberry slices.
