Peanut Butter Pie

Sweet and dreamy, bursting with peanut butter richness, this is the perfect treat for any occasion!

You can also replace the peanut butter with sunflower butter for a nut-free alternative!

Recipe

Ingredients

Crust:
28 vegan sandwich cookies
5 tbsp. vegan butter flavored coconut oil, melted
 
Filling:
1 cup peanut butter
8oz Violife cream cheese (at room temperature) 
1 cup powdered sugar
9oz tub cocowhip  

Chocolate Drizzle:
1 11.25oz can Nature's Own sweetened condensed coconut milk
​3 tbsp. cocoa powder

Directions

  1. Crust: ​Place the cookies in a food processor until you reach a sandy consistency.  Add in the melted butter and once combined, press the mixture into a 9" pie dish.
  2. Filling:  In a large mixing bowl, beat together the peanut butter and cream cheese.  Once well combined, add in the sugar and continue to mix.
  3. Once thoroughly combined, gently fold in the cocowhip.  
  4. Pour into the pie crust and chill for at least 2 hours or overnight.
  5. Chocolate Drizzle:  In a small saucepan over medium heat, stir together the coconut condensed milk and cocoa powder, continuously stirring until thoroughly combined.  Allow to cool slightly before drizzling over the pie.
  6. Serve and enjoy!
