Pumpkin Bread

A sweet pumpkin bread full delicious holiday flavor, serve this treat for breakfast or with a scoop of vanilla nice cream for dessert!

Ingredients

1 and 1/2 cups flour
1/2 tsp salt
1 cup cane sugar
1 tsp baking soda
1 cup pumpkin puree
 1/2 cup coconut oil
 1 ripe banana, mashed
 1/4 cup water (at room temperature)
 1/4 tsp nutmeg
 1/4 tsp cinnamon
 1/4 tsp all spice 

Directions:

  1. Preheat the oven to 350 degrees Fahrenheit.  Grease a loaf pan (9 x 5 x 3) with coconut oil and set aside.
  2. In a medium-sized mixing bowl, thoroughly mix together the flour, salt, sugar, and baking soda.
  3. In a separate, larger mixing bowl, mix together the pumpkin puree, coconut oil, banana, water, nutmeg, cinnamon, and all spice. 
  4. Combine both mixtures and mix them together, but not too thoroughly; just enough to get all of the clumps out.  
  5. Pour the batter into the greased loaf pan and bake in the preheated oven for 50 to 60 minutes,  until a toothpick comes out clean.
