S'mores Pie

A light chocolate filling with a fluffy marshmallow topping and a sprinkling of chocolate chips, this s'mores pie is a very easy to make sweet!

Ingredients

Crust:
2 cups all-purpose flour
1 pinch of salt
1/2 cup coconut oil (I use vegan butter-flavored coconut oil)
1/4 cup coconut milk 
Chocolate filling:
12oz silken tofu
1 1/2 cups vegan chocolate chips, melted
2 tbsp. oat milk
1/2 cup cane sugar
Marshmallow fluff:
1/2 cup aquafaba 
1 tsp vanilla extract
1/4 tsp cream of tartar 
3/4 cup cane sugar
Other:
1/4 cup vegan chocolate chips, for topping

Directions

  1. Preheat the oven to 400°F. 
  2. Start by making the crust.  To do so, mix together the flour and salt.  Stir in the coconut milk and coconut oil with your clean hands, making sure not to over-mix.  Roll out the pie dough and place it in a greased 9" pie pan.  Prick the bottom with a fork and cut off any excess dough.  Bake the crust in the preheated oven until slightly golden.  This should take 15 to 20 minutes (maybe more maybe less.  It mostly depends on how thick you leave the crust).
  3. Meanwhile, make the chocolate filling by placing all of the ingredients in a food processor and blending until completely smooth. 
  4. Once the crust has mostly cooled, pour the pie filling in it and chill in the fridge while you make the marshmallow fluff topping. 
  5. Make the marshmallow fluff by beating the aquafaba, vanilla, and cream of tartar with a hand mixer until fluffy.  Slowly pour in the sugar and beat until a stiff peak forms (about 10 minutes).  
  6. Scoop the marshmallow fluff onto the pie, sprinkle with chocolate chips, and place back in the fridge until it sets (at least 2 hours).  
  7. Slice, serve, and savor!

This pie was delicious, my favorite part was the chocolate filling, it reminded of chocolate pudding. Great dessert.
