Snowball Cookies

Soft and sweet Russian tea cookies that are easy to make and quick to bake; the perfect cure for a case of the munchies!

Recipe

Ingredients

1 cup coconut oil*
1 tsp vanilla extract
6 tbsp powdered sugar + extra for rolling cookies in
2 cups all-purpose flour

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium sized mixing bowl, cream the coconut oil and vanilla extract until smooth.  In a separate bowl, thoroughly combine the 6 tbsp of confectioners' sugar and flour.  Stir together the two mixtures until it is blended. 
  3. Use your hands to roll the dough into 1 inch balls and then place them on an ungreased cookie sheet, setting them two inches apart from each other.
  4. Bake for 12 minutes in the preheated oven and then set to cool.  Once cool, roll the cookies in powdered sugar so that they look like snowballs. 
  5. Serve and enjoy!     ​
*You can use a vegan butter substitute instead if you'd like a buttery flavor!
