A soft, moist, chewy chocolate chip cookie, this cookie recipe is everything you want a cookie to be!
2 and 1/4 cups all-purpose flour
3/4 cup cane sugar
3/4 cup brown sugar
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
2/3 cup apple sauce*
1/2 cup coconut oil**
1/2 cup Vegan Chocolate Chips***
*A large, mashed banana works great too, but since banana sizes vary, you might need to add a bit more or add a little applesauce if the dough is too dry just before adding in the chocolate chips. And remember, a little goes a long way, so add it in bit by bit!
**I use coconut oil, and both regular and vegan butter-flavored both work great! You can also use vegan butter instead if you'd like.
***I use Enjoy Life, any of their sizes work...but feel free to use your favorite vegan chocolates!
