Rich and creamy this mac and cheese recipe is a win with everyone in my family, even my picky little sister!

Extra-Creamy version
For an extra creamy mac and cheese, follow the recipe below, but between steps 1 and 2, heat a tablespoon of butter-flavored coconut oil over low heat until melted.  Then add 2 tbsp. of all-purpose flour and stir for about 30 seconds (make sure it's smooth) before adding in the "milk" mixture.  Follow the rest of the recipe as is!

Ingredients

1 pound pasta noodles, cooked to liking
1 cup  non-dairy milk 
8oz bag  Violife cheddar shreds
1/4 cup nutritional yeast                     
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper flakes
2 tbsp.  The New Primal Medium Buffalo & Wings Sauce (optional)

Directions

  1. In the liquid measuring, mix together the plant-based milk, nutritional yeast, garlic powder, onion powder, black pepper, and buffalo sauce. 
  2. Add the mixture to the pot and stir over medium heat. 
  3. Add the cheddar shreds and mix until melted.  
  4. Once melted, add the pasta into the pot and evenly coat the noodles. 
  5. Remove from heat and serve!

Do you have any suggestions for a cheese substitute if violife isn't readily available in my area?

Violife cheddar shreds work best in this recipe since it melts great, but if you can't find it nearby you can look for others such as "Go Veggie" which will also work.
