Apple Dumplings

While apple pies get most of the fame, there are a ton of other amazing fall treats that are just as good!  Take these apple dumplings for example.  They're basically mini apple pies, individually served and ready to enjoy!

Ingredients

Dough:
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
3 tbsp. vegan butter, refrigerated
1/2 cup oat milk

Filling:
2 apples, peeled and diced (I like using granny smiths but any apple will work)
1 tbsp. vegan butter, melted 
3 tbsp. brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg           

Syrup:
1 cup hot water
1/2 cup brown sugar
2 tbsp. vegan butter

Directions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix together the flour, baking powder, salt, and nutmeg.
  3. Once well combined, cut the refrigerated butter into pieces and add to the flour mixture.  Then use your hands to pinch the butter into the flour so that it forms a sand-like texture.  
  4. Pour in the milk and mix.
  5. Transfer the mixture onto a floured surface and knead to form a dough that holds together well, then roll the dough out into a 12" square.  Cut the dough into 4 equally sized squares.  
  6. In a small bowl, make the filling by mixing together the brown sugar, cinnamon, and nutmeg.  Then mix in the melted butter.  Once well combined, mix in the cubed apples and coat evenly. 
  7. Scoop the apple mixture into the center of each dough square (you might not use all of the apples).
  8. Pinch together the corners of each dough square to close the dumpling and place the dumplings in an oven-safe pan, about an inch away from each other.
  9. ​In a small bowl or pitcher, make the syrup by mixing together the hot water, brown sugar, and vegan butter.  When the butter has melted and everything is thoroughly combined, pour the syrup into the pan with the dumplings. 
  10. Bake the dumplings in the preheated oven for about 20 to 25 minutes or until the tops are slightly golden.
  11. Remove from the oven and allow to cool for about 5 minutes. 
  12. Serve while still warm and enjoy!
