Alfredo is a classic Italian dish, and one that's really tasty too! But a lot of the creamy vegan versions are cashew-based, and though there's nothing wrong with that, it requires extra steps and not everyone can enjoy it since nut-allergies are extremely common. So, here's a creamy, nut-free one-pot alfredo sauce recipe that's so easy to make and the closest thing you'll ever find to the traditional alfredo! The creaminess and flavor of this recipe mimics that of nonvegan alfredo so closely, that if I'd been served this at a restaurant I would have said "um...I ordered the vegan alfredo" and still been doubtful when they said that it was! Fettuccini is the noodle most commonly used in alfredo, or at least the most famous, but you can use any that you like! Fusilli works great in my experience! Also, for some more color, texture, and for a healthy option, try adding some broccoli! All I did was cook some frozen broccoli florets with the pasta and it turned out great! RecipeIngredients1/2 cup vegan butter-flavored coconut oil* 2 cups oat milk** 4oz Tofutti cream cheese*** 3-4 large garlic cloves, minced 1 tsp garlic powder 1/2 tsp basil 1/2 tsp oregano 1/4 tsp salt (or to taste) black pepper, to taste 1 cup shredded vegan parmesan**** 1lb cooked pasta (noodle of your choice DirectionsIn a large skillet over medium heat, mix together the vegan butter/coconut oil, milk, and cream cheese, cooking until everything has melted and stirring often. Mix in the minced garlic and spices and whisk until smooth. Add in the parmesan and stir until thoroughly melted. Combine with the cooked noodles, serve and enjoy! Notes*You can use any vegan butter instead **I like oat milk, but any unsweetened plant-based milk should work, so feel free to choose your favorite! ***Although I usually use Violife cheeses, it won't work in this recipe as their cream cheese would simply turn into oil. Also, I found the Tofutti cream cheese tough to melt, so it'd be easier to beat it with a fork first to make it creamier before using in the recipe! ****I used a 4oz container of Follow Your Heart shredded parmesan and it worked AMAZING, but you can use any vegan parmesan.
