Even before I became vegan, peanut butter cookies have always been one of my favorite cookies, so I love the fact that I can now make a cruelty-free version of this amazingly sweet treat! They're just as great as I remember and certainly do not disappoint!
A little buttery and with a ton of delicious peanut butter flavor, the perfect balance of sweet and salty, these cookies are perfect to enjoy any time!
1/2 cup vegan butter, at room temperature
1/2 cup cane sugar
1/2 cup light brown sugar
1 tbsp. oat milk*
1 tsp vanilla extract
1 cup smooth peanut butter
1 1/3 cups all-purpose flour
3/4 tsp baking soda
1/4 tsp salt**
*Any plant-based milk works, so feel free to use your favorite
**Salt isn't necessary if using salted peanut butter
