Pretzels

A soft, buttery pretzel with just the right amount of salt, these vegan pretzels are just as delicious as the ones at the mall!

Another great thing about theses pretzels is that you can also make them into pretzel bites!  They're just as tasty, but bite-sized and easier to make! 

​Just cut the strips of dough using a pair of kitchen scissors in step 7 and continue as stated in the recipe below!  Also, you might want to bake them a little less.

Ingredients

For the Pretzels:
1/4 oz active dry yeast

1 cup warm water
2 tbsp vegan butter-flavored coconut oil
1 tbsp brown sugar
1/2 tsp salt
2¾ cups all-purpose flour (you may not need all of it)
1/4 cup melted vegan butter-flavored coconut oil


Baking Soda Solution:
4 cups water
1/4 cup baking soda

Directions

  1. Place 1 cup warm water in a large mixing bowl and sprinkle the yeast on top. Let it dissolve for about 2 minutes.
  2. Once dissolved, mix in 2 tbsp. coconut oil, brown sugar, salt, and 2 cups of the flour to form a sticky dough.
  3. Stir in any remaining flour, 1/4 cup at a time, until dough begins to pull away from the sides of the bowl and when touched with a finger, does not stick and springs back lightly.
  4. Place in a lightly greased bowl, cover and set aside to rise in a warm spot for about 20 minutes.
  5. Preheat the oven to 450°F. Line 2 baking sheets with parchment paper. Make sure to grease the parchment paper with coconut oil.
  6. Punch the dough down a couple times to break up any air pockets. Divide the dough into 8 equal pieces.  Using your palms and the heels of your hands, roll each piece into a 12" to 15" long rope on a clean work surface (do not flour your work surface).
  7. Shape the rope into a circle with about 2" to 3" of each end overlapping (like the shape of a ribbon). Twist the ends where they overlap, then flip the twisted ends over the circle, pinching the ends into the circle to form a pretzel shape.
  8. In a large saucepan, bring 4 cups of water to a boil over medium heat. Add in the baking soda; mixture will bubble violently for a minute. Do not add the baking soda before bringing the water to a boil.
  9. Drop a pretzel into the boiling water and allow pretzel to boil for about 30 seconds. Gently remove pretzel from pot with a slotted spatula, allowing any excess water to drip off before placing on the greased baking sheets.
  10. Shape back to pretzel shape if needed. Sprinkle with coarse sea salt, if using. Repeat with remaining pretzels.
  11. Bake the pretzels for 10 to 12 minutes or until golden brown on top. Brush with melted butter-flavored coconut oil while still hot.
  12. Serve and enjoy!
