Pupusas

A classic Salvadorian dish, pupusas are quite tasty; especially when served with salsa roja and a large helping of curtido!

Ingredients

4 cups masa harina 
3 1/2 to 4 cups warm water
1/2 tsp. salt
2 to 3 tbsp. Violife cream cheese

1 can refried beans  (you can use homemade too)
2 cups shredded Violife mozzarella shreds

Directions

  1. In a large bowl, mix together the masa harina and salt. 
  2. Add in the warm water, a little bit at a time, mixing the dough with your hands, until you have a soft playdough-like consistency (you may not need all of the water).
  3. Roll the dough into large, golf ball-sized portions.
  4. Use your hands to shape the dough into discs with a diameter of about 4 inches.
  5. In a small bowl, combine the mozzarella shreds and the cream cheese.
  6. Place about 1/2 tablespoon of the beans in the center of the dough disk, along with a pinch of the cheese mixture. 
  7. Gently bring the edges of the disk up, over the filling and pinch them together to form a ball. Reform a disk by gently patting the dough.
  8. Heat a large, ungreased skillet over medium heat.  Once heated, place the pupusas on the pan and cook each side for about 2 to 4 minutes.
  9. Serve warm with a helping of curtido and salsa roja!  Enjoy!
